Special Recipe post

I while ago my Dad asked for the recipe for the Barbecue Turkey Meatloaf. I finally had Lisa get me Kristin's recipe book last night. It was in a spot where I wasn't sure I could reach it without messing something up. Better safe than sorry. So anyway, here it is...

Barbecue Turkey Meatloaf

Ingredients:
1 pound ground turkey
1/2 cup plain bread crumbs
1 cup barbecue sauce
2 egg whites
1/2 to 3/4 cup of onion, depending on your tastes
pepper to taste

Cooking directions:
Preheat oven to 350 degrees. In large bowl, combine turkey, bread, 1/2 cup barbecue sauce, egg whites, onions, and pepper mix. Place in loaf pan. Spread 1/2 cup barbecue sauce over loaf. Bake 1 hour.

There are a lot of recipes in this book. And just looking at some of the names is making me hungry. "White Bean Chicken Chili", "BBQ Chicken Pizza", "Pasta Primavera".

  1. The recipe has been updated to include onions which were not listed originally. Seems someone didn't write them in the recipe book. No big deal unless someone else is sharing the recipe. Hehe.

    The original recipe called for 1 cup of onions but Lisa and Kristin felt 1 cup was too much and suggest 1/2 to 3/4 cup instead.

  2. Sounds really good...and healthy. I would agree that 1 cup of onions is way too much for that amount of meat.
